Campfire Pierogi

Submitted by Ken & Merry Stuczynski: You've never lived until you've had pierogi on a campfire!  A stick of butter in the pan over hot coals, throw them in (as will fit unstacked in the pan) and sizzle, sizzle, sizzle! 

bullet1 doz. Nowinski's Pirogies
bullet1 stick of butter

Unintentionally sprinkle with sand if at the beach -- who cares?  Sprinkle with salt and pepper to taste, but we don't.  Serve hot and wolf down as they cool.  Repeat.

Makes Never Enough Servings

 

Summer Pierogi Salad

bullet1 doz. Nowinski's Pirogies, browned
bullet1 cup Italian dressing
bullet1 cup broccoli; 1 cup carrots (parboiled until al dente)
bullet1 medium tomato, seeded and chopped
bullet1/4 cup parmesan cheese
bullet1/2 cup artichoke hearts, from can (optional)

Place all ingredients in a 9"x13" pan.  Sprinkle with salt and pepper to taste.  Sprinkle with parmesan cheese.  Chill 3-4 hours or overnight.  Serve cold.  

Makes 6-8 Large Servings

 

Sunshine pierogi Salad

Ingredients

bullet1 small red pepper, chopped finely
bullet1 small yellow pepper, chopped finely
bullet1/4 cup red wine or balsamic vinegar
bullet3 tbsp water
bullet2 tbsp mayonnaise
bullet1 tbsp oil
bullet1 tbsp parmesan or Romano cheese
bullet1 tsp sugar
bullet1 tsp basil
bullet1 clove garlic
bullet1/4 tsp dill weed
bulletsalt/pepper, to taste

Put above ingredients into blender.  Process well.  Pour over 1 lb. Nowinski's pierogi (thawed in hot water, 6-8 minutes drained) in a 9"x13" pan.  Sprinkle with fresh parsley.  Chill/marinate 3-4 hours or overnight.  Serve Cold.
